From the cocktail hour to the after-party, it’s all about smaller versions of fall’s signature foods. Miniature pots of macaroni and cheese tiny souffles, and shots of warm pumpkin soup are being served in addition to or even at some receptions replacing big portions of filet mignon and fish. Even casual items (tiny cheeseburgers, petite cones of fries, and bite-sized Reuben sandwiches) will get the couture treatment when served on silver trays. All of this food is completely recognizable but the miniature size makes it fun and exciting for wedding guests.
For more formal dinners, we are seeing chefs being creative with seasonal produce: individual chicken potpies, miniature baby lamb chops, and roasted Cornish hens. The meal is finished off with a dessert table featuring sweets like petit fours, brownies, apple pies, and mini cheesecakes. After dinner, brides love small, sweet items such as mini root beer floats and malteds to be passed, or to offer a coffee and cookie station.
